Healthy Oatmeal Peanut Butter Chocolate Chip Pancakes

John LOVES chocolate chip pancakes. He’s a happy man with just the box of Aunt Jemima’s pancakes but I love making them healthy. I’ve tried a few recipes & this is the first batch I’ve loved.  They were delicious! Hubs loved them too. I went through a bunch of different recipes but couldn’t find one that I liked all the ingredients (or had all the ingredients in my pantry) so I combined a few recipes & made a few changes and ended up with this.

1 egg

1 teaspoon baking powder

pinch of salt

1/2 teaspoon vanilla extract

1 tablespoon peanut butter (any butter of your choice works, almond butter, etc.)

1 tablespoon of coconut oil (if you’re not a fan of coconut oil, you can replace with an oil of your liking)

1/3 cup of milk (also milk of your choice, I used skim. If you’d like dairy free, choose a non-dairy alternative)

1/2 cup of oats

1/3 cup of whole wheat flour (if the consistency is too runny, add a little more.) Also- if you’re not a fan of whole wheat, you can do white flour too. I actually did half & half (:

1/2  cup chocolate chips (amount of chocolate chips can vary to your liking, John likes a lot of them (: )

*If you’d like a gluten free recipe, replace flour with gluten free flour blend, & oats with gluten free rolled oats.*

For non-dairy recipe, replace chocolate chips with non-dairy chocolate chips, soy/flax/almond milk or any non-dairy milk.

Combine all ingredients (chocolate chips last). Let sit for 5 minutes. I put the griddle on 300 because I tend to burn things. I cooked each side for about 3-4 minutes. (Use your choice of oil or butter to coat the griddle, I used this Tava Pure Spreadable Butter. (Normally I would use coconut oil but I didn’t want the pancakes to have too much of a coconut flavor.)



I added a side of turkey bacon, an egg & green juice.


I just ate the leftovers as a snack & they were even better! ENJOY THIS SNOW DAY (: xo
